Know what food cost you last week. Every Monday.

Indentri Margins reads your sales, your supplier invoices, and a Sunday count. Then it sends you one short email with the numbers, the reasons, and the one thing worth a look.

No card at sign-up. First month free, then $150 a month per location.Separate from our websites: you don't need an Indentri site to use it. Website or Margins? See the difference →

The money leaves quietly.

Most independent restaurants find out their food cost when the accountant says so. That is weeks late, and too late to fix. Prices creep up on invoices nobody reads twice. Pack sizes shrink. Cases sit in the walk-in.

Margins catches it the same week it happens, in dollars, with the invoice lines to prove it.

An overhead spread of curries, rice, breads, and chutneys in mismatched bowls on linen.

Three things in. One email out.

/01

Connect your sales

Clover, Square, and Toast sync on their own. Any other POS can upload a CSV export. No POS at all? Type in your weekly totals.

/02

Send us your invoices

Take a photo, upload a PDF, or forward the email to your restaurant's private inbox. AI reads the line items. Nothing counts until you or your manager confirms it.

Count on Sunday night

Whoever closes gets a link. No login, no app to install. They count what is on the shelf and tap done.

Then, every Monday morning

One email. Last week's sales, food spend, food spend %, how that compares to last week and your four-week average, and one finding worth your attention. One tap opens the full report, no login needed.

The Monday email.

This is the whole thing. A sample, with made-up numbers. Yours is built from your own sales, invoices, and Sunday count.

Good morning. Here is last week, Monday through Sunday close.

  • Sales

    $18,420

    up 4% on last week

  • Food spend

    $5,784

    14 invoices, all confirmed

  • Food cost

    31.4%

    29.8% last week · 30.1% four-week avg

  • Prime cost

    58.9%

    with $5,070 labor

One thing worth a look

Boneless chicken thighs are up 12% across the last four invoices.

Your poultry supplier billed $2.89/lb, then $3.09, then $3.24 on the last two. At your recent buying rate of about 880 lb a month, that is roughly $310 a month more for the same chicken.

Food cost went from 29.8% to 31.4% this week. Most of that is the chicken. Sales were up, so the rest is normal movement. Nothing else needs your attention.

Sample. The numbers are made up; the shape of the email is real.

What you get.

The Monday email

Sales, food spend, and food spend % for the week that just closed. Prime cost when you enter labor. One insight, the biggest one, with the dollars behind it. A paragraph written in plain words from your own numbers.

Findings that name the dollars

Price creep, smaller pack, bought too much, slow to use up. Each shown as monthly dollars at your recent buying rate, never as a percent. Every finding links to the invoice lines behind it.

Recipes and menu

Enter recipes once. Plate costs update whenever an invoice changes an ingredient price. See menu food cost % against your target.

Variance, framed as questions

What your recipes and sales say you should have used, against what the Sunday count says you really used. In dollars, per ingredient. Written as things to look into, not accusations.

A forecast you can check

Two weeks of sales, day by day, built only from your own past weeks. It refuses to forecast under four weeks of history. AI explains any adjustment. The math stays the number of record.

Reorder and prime cost

Par levels and lead times give reorder suggestions. Weekly labor gives prime cost. Connect Gusto or QuickBooks and the labor numbers come in on their own.

What it could be worth.

Put in your numbers, pick the food cost you think you could get to, and see what is left after Margins' bill and the free month.

What you ring up for food in a typical month. Leave drinks and delivery-app orders out if you can.

Out of every $100 you sell, how much went to buying the food. Not sure? Most independent kitchens sit somewhere between 28% and 38%.

30%

This is your guess, and the only guess in the math. We start you 2% below today. On your sales, every 1% lower is $600 a month back. Price creep, shrinking packs, and over-ordering are where it hides.

Free until it proves itself.
